Chicken Pot Pie

Last week Kenny happened to be flipping through last months Southern Living magazine and found a recipe for Chicken Pot pie that he asked me to make. I had gotten all the ingredients for it over the weekend but kept putting it off to make because I have never had chicken pot pie but it just doesn't sound good. The recipe was found in the January issue of Southern Living. I decided tonight I would make it, and it ended up being so good! Kenny talked about how good it was for like 2 hours... So I guess it's a keeper recipe:)

Recipie
  • CHICKEN PIE FILLING
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 1 1/2 cups chicken broth
  • 1 1/2 cups milk
  • 1 1/2 teaspoons Creole seasoning
  • 2 tablespoons butter
  • large sweet onion, diced
  • (8-oz.) package sliced fresh mushrooms
  • 4 cups shredded cooked chicken
  • 2 cups frozen cubed hash browns
  • 1 cup matchstick carrots
  • 1 cup frozen small sweet peas
  • 1/3 cup chopped fresh parsley
  • PASTRY CRUST
  • (14.1-oz.) package refrigerated piecrusts
  • egg white
  • Preparation
  • 1. Prepare Filling: Preheat oven to 350°. Melt 1/3 cup butter in a large saucepan over medium heat; add all-purpose flour, and cook, whisking constantly, 1 minute. Gradually add chicken broth and milk, and cook, whisking constantly, 6 to 7 minutes or until thickened and bubbly. Remove from heat, and stir in Creole seasoning.
  1. 2. Melt 2 Tbsp. butter in a large Dutch oven over medium-high heat; add onion and mushrooms, and sauté 10 minutes or until tender. Stir in chicken, next 4 ingredients, and sauce.
  2. 3. Prepare Crust: Place 1 piecrust in a lightly greased 10-inch cast-iron skillet. Spoon chicken mixture over piecrust, and top with remaining piecrust.
  3. 4. Whisk egg white until foamy; brush top of piecrust with egg white. Cut 4 to 5 slits in top of pie for steam to escape.
  4. 5. Bake at 350° for 1 hour to 1 hour and 5 minutes or until golden brown and bubbly

*** I don't have a cast iron skillet so I just used a pie plate.

HAIR LOVE

I use the moisture shampoo and and volume conditioner.

Paul Mitchell Keratin Treatment
I use this 1-2 times a week
Redken Anti Snap: Twice a week on days I dont use the PM Keratin Treatment

New Years Resolutions.. Better late then never!

A little late to making new years resolutions, but never late than never? That's my theory. I have not made an official list or anything of things that I would like to accomplish but I have kind of had them just floating in my mind. After-all, who keeps their resolutions past February? Hopefully me...:) Why is it though that men don't make resolutions like women do? i asked Kenny if he had any new years resolutions and he looked at me like I was nuts for even asking. I guess I have enough to share:)

I. Cook more! I go through a love hate relationship with cooking. I love cooking but hate grocery shopping, so I never get food to cook with. With work, JL, and being out of town a lot its hard to even grocery shop because I never know if ill even be home at dinner time. I would love to lose a few pounds before May for my bachelorette party and ultimately the wedding. So eating at home usually is healthier than eating out. My goal is to make a new recipe once a week. So far I have kept up with trying new recopies. I usually will just make salmon and veggies for dinner, but it does get a little boring. So making new things every week will spice up our dinner routine. 

These are recipes we have tried so far, and their reviews:
Mini Apple Pies: these were so good! Kenny and I both love them and at one too many.
Pepperoni Lasagna: this was tasty too. Kenny voted it 5 thumbs up and said it was his new favorite meal.
Crock Pot Orange Chicken: I thought this dish was good, Kenny said "never make that again"... LOL



2. Work out at least 5 days a week. I sometimes work out 5 days a week and sometimes I work out 2 days a week, so I want to get more consistent and keep a work out journal. Crossing my figures I can keep this goal.


3. READ! I haven't read a book in so long. I would like to start reading at night, now I just have to find a book to get reading! I find picking a book is hard, almost as hard as picking it up and reading it... Maybe ill start this resolution tomorrow. 

Thats all for my resolutions, I think 3 resolutions is a good reasonable number to try and keep:)

Wedding Update

I am so happy that everything is falling into place for our wedding. Thankfully our wedding planner keeps everything in line, but we have checked so many things off our check list over the past few weeks! I have been non-stop everyday doing wedding things. It has seriously been so relieving getting so many things done!

Things that have been crossed of the list!

Caterer- Our wedding planner recommeded this great caterer in town- Catering Capers. We met with them and she planned a mouth watering menu. Everything from beef brisket with mango salsa to fried green tomatoe BLT's and a biscuit bar. They really helped us pick the perfect menu for the theme we are going for.

Florist- After meeting with Designs by Darin and sharing pictures of flowers I love I think my flowers are going to be gorgeous and are going to be my favorite part of the decorations.

Bridesmaid Dresses & Shoes as well as MOB and MOG dresses have all been picked and purchased. I chose 6 different styles of dresses from Alfred Sung. I went in thinking I wanted a blue dress and came out choosing a hot magenta bright pink! The color in the picture doesn't give it justice. It's so pretty, I love it!! I went into the store and just fell in love with the color.

Bachelorette Party Booked! 16 girls, 1 beach house, 2 nights = loads of fun! My MOH Kelly is amazing and planned the perfect bachelorette party. Can't wait to dress up, drink margaritas, lay out by the pool, and have the best weekend with all my closest girlfriends:) 

Linens, rental chairs,cake, save the dates, groomsmen outfits, hair, make-up artist have all been selected too:)

Next things to conquer on my to do list:
groomsmen gifts, bridesmaid gifts,flower girl dress, cake tasting, get engagement picture blown up and matted for guests to sign and send a list of music for the band.

Christmas Day and the rest of break!

We spent Christmas day with Kenny's dad and the family. We had lots of laughs, good food, and cute babies! We opened presents in the morning and spent the rest of the day enjoying time with everyone.

The rest of the week was dedicated to wedding planning and relaxing. We got a ton of wedding things done! ( More on that later). We literally have everything set in place except for a few minor details. It's so relieving knowing everything is coming together so smoothly. Thanks to our wedding planner my mind is at ease. We were sad to leave Tallahassee this weekend to come back to reality but happy to be home.

Christmas Eve Eve and Christmas Eve Recap

Sorry for the lack of blogging for the past 2 weeks ya'll! I have been enjoying spending time with friends and family. Kenny and I traveled the whole break to South Florida to North Florida to the Panhandle and back. Needless to say we are exhausted and excited to be back home:) We really had a great Christmas holiday that included 3 Christmas, good food & wine, and family! 

We spent a few days in South Florida with my parents, and did Christmas with them on Christmas Eve Eve. Kenny spent the few days while we were down there getting golf lessons and playing golf, while I spent it shopping;)

Christmas Eve morning we woke up and drove to Tallahassee and spent the day with Kenny's mom, stepdad and Kenny's siblings. She made a delicious dinner as always, and then we opened presents.
